I use to eat this in China.  The small Chinese restaurant behind my house here in Singapore does an ok job making these.  They are served cold with a soy/peanut sauce

Made use of my gigantic Singapore kitchen today for the first time.  Nothing special on the menu. Made some 豆苗 with 大蒜 and 蠔醬. Maybe i’ll do something more complicated next week.
